Beemster Mac ‘n Cheese Italian style

Serves 2. Time: 35 minutes.


  • 40 g salami
  • 60 g cherry tomatoes
  • 5 g basil
  • 180 g macaroni
  • 25 g salted butter
  • 30 g flour
  • 250 ml whole milk
  • 100 g Beemster Mild, grated
  • Pinch of salt and pepper
  • 60 g Beemster Medium, grated
  • 40 g black olives, sliced


  1. Preheat the grill to 180 degrees. Slice the salami and cut the tomatoes in quarters. Pick the leaves from the basil twigs. Cook the macaroni as directed on the package.
  2. Melt the butter in a saucepan. Once the butter has melted, add the flour. Stir with a whisk until the butter is completely incorporated. Let the flour cook for 2 minutes, stirring constantly. Slowly pour the milk into the pan and let the flour/butter mixture dissolve while stirring. Bring to the boil while stirring. Add the mild cheese to the mixture and remove the pan from the heat. Stir until the cheese is dissolved and season the sauce with salt and pepper.
  3. Add the cooked pasta to the sauce and stir well. Put the pasta into two bowls and add the salami. Place the Mac ‘n Cheese under the grill for 5 minutes for a crispy cheese crust.
  4. Top the Mac ‘n Cheese Italian style with the sliced olives, tomatoes, Medium cheese and basil leaves.

Preparation tip:

To give the cheese sauce extra flavor, you can add dried Italian herbs to the cheese sauce.
